Why You Should Make This Recipe
- Roasted Red SalsaQuesadillas are the ultimate comfort food. Add flavorful, tender pork carnitas and you have the most satisfying quesadilla. Crispy tortilla, melty gooey cheese. Serve it with a side of salsa, guacamole, sour cream or my spicy avocado jalapeño sauce.
- It's super quick and easy to make! One of the best ways to use leftover carnitas like a burrito or nachos, you get a delicious filling meal on a busy weeknight. You can also customize by adding some beans for example.
- It's kid-approved, which for me as the dad of two picky eaters, is a huge win!

Key Ingredients and Variations
- Flour tortilla: I use a burrito size tortilla and fold it in half. You can also use two taco size ones instead.
- Cheese: If you've made my recipes, you know how much I encourage getting blocks of cheese and grating them yourself. It just tastes better, melts creamier and is budget-friendly after you invest in a grater. I use cheddar and mozzarella on this one.
- Pork Carnitas: I use leftovers, I like to warm them up before adding them to the quesadilla.
