    Comforting, hearty and packed with flavor, this easy carnitas burrito is on repeat in my kitchen when I make pork carnitas. Tender meat with crispy edges, melted cheese, rice, beans, salsa and guac, simple but delicious! A must-try!

    • This carnitas burrito is jam-packed with flavor. Tender carnitas with cheese, rice, beans, guacamole and salsa fresca. Perfect to use leftovers like on my nachos, and cheaper and better than take-out! Serve it with a side of jalapeño avocado sauce or jalapeño salsa for heat. Delicious and satisfying.
    • Easy to customize, you can switch out ingredients like using a different kind of salsa, add shredded lettuce, sautéed bell peppers, add sour cream.

    Key Ingredients and Variations

    • Large flour tortilla: burrito size, make to heat it up before filling so its pliable. You can use a gluten-free tortilla too if needed.
    • Shredded cheese: I always recommend shredding your own cheese, it tastes and melts better. I used cheddar and mozzarella for this one but you can use Monterey jack too. My grater is my favorite kitchen gadget. I use it for veggies too.
    • Leftover carnitas: heat them up before adding them to the burrito. You can play around and use different meats like chicken or steak.
    • Beans: I used pinto beans, they need to be drained well, you can use black beans or refried beans too if you prefer.
    • Rice: already cooked, I used a cilantro lime rice, you can use Mexican or even Spanish rice.
    • Salsa fresca.
    • Guacamole: for extra creaminess.

    How to make this carnitas burrito

    • Heat up large tortilla in a skillet for a few minutes on medium high heat or in the microwave for 10-20 seconds.
    • Add the beans to the microwave for 1 minute in a microwavable dish.
    • Heat up the carnitas in a skillet on medium-high heat to get crispy edges.
    • Warm up the rice.

    Top Tips

    • Use a large tortilla, 10-12 inches. Make sure to warm it up first so it's flexible and doesn't break when sealing the burrito.
    • Drain the juicy salsa so it doesn't leak and breaks the tortilla.
    • Don't overfill the burrito, it'll be harder to roll and more likely to break and make a mess.

    Make sure to drain the beans really well. Start with cheese, beans and rice when layering the burrito filling so they absorb extra juices (especially the rice). Make sure to not add too much liquid from the salsa too.

    • ½ cup cooked rice

    Instructions

    • Add guacamole. Fold the burrito by folding the left and right side over the filling towards the center. Then roll the burrito tucking the side closest to you under the filling, then roll one more time to seal the burrito. Serve and enjoy!

    • Optional: add the burrito seam side down into skillet and cook for a couple minutes or until golden brown. Flip carefully and repeat on the other side.
