- Rice: already cooked, I used a cilantro lime rice, you can use Mexican or even Spanish rice.
- Salsa fresca.
- Guacamole: for extra creaminess.

- Heat up large tortilla in a skillet for a few minutes on medium high heat or in the microwave for 10-20 seconds.
- Add the beans to the microwave for 1 minute in a microwavable dish.
- Heat up the carnitas in a skillet on medium-high heat to get crispy edges.
- Warm up the rice.

- Then add beans.

- Add cooked rice.

- Then add cooked carnitas.

- ½ cup shredded cheese
- ½ cup pinto beans - rinsed and drained well
- ½ cup cooked rice
- ¾ cup pork carnitas - full recipe here

Instructions
- Heat up a large tortilla in a skillet for a few minutes on medium high heat or in the microwave for 10-20 seconds. Add the beans to the microwave for 1 minute in a microwavable dish.Heat up the carnitas in a skillet on medium-high heat to get crispy edges.Warm up the rice.
- Layer the cheese in the middle of the tortilla.
- Then add beans.
- Then add rice.
- Add carnitas.
- Add salsa fresca, making sure to drain excess juices.
- Add guacamole. Fold the burrito by folding the left and right side over the filling towards the center. Then roll the burrito tucking the side closest to you under the filling, then roll one more time to seal the burrito. Serve and enjoy!
Notes
- Optional: add the burrito seam side down into skillet and cook for a couple minutes or until golden brown. Flip carefully and repeat on the other side.
