Bean and Cheese Tacos

Simple but totally comforting and delicious, bean and cheese tacos are a perfect quick recipe kids and adults will love for dinner on a busy weeknight or meatless Monday! Using only a handful of ingredients these tacos are cheesy and full of flavor.

Ingredients

  • 4 flour tortillas taco size
  • 1 cup refried pinto beans
  • 1 avocado
  • 1 cup shredded cheese
  • ½ cup pico de gallo recipe here

Instructions

  • Add the beans to a microwave safe container or sauce pan, and heat up until warm.
  • Preheat a large skillet on medium heat, add 1-2 tortillas at a time. Add some cheese, then close it to make mini quesadillas. Cook for a few minutes until the cheese is melted, flip once.

  • Carefully open up the mini quesadilla, add the warm beans, salsa, avocado any toppings of choice to your tacos like fresh cilantro or hot sauce. Enjoy!
